- Wash and dry all your vegetables. Chop the mixed greens, slice the tomatoes, dice the cucumbers and bell peppers, shred the carrots, and slice the red onion and avocado.
- In a large bowl, layer your mixed greens as the base.
- Add the cherry tomatoes, cucumbers, bell peppers, carrots, and red onion on top of the greens.
- If using, add your grilled chicken, chickpeas, or tuna.
- Top with avocado slices and any additional toppings you desire.
- Drizzle your favorite dressing over the top and gently toss everything together just before serving.
- Portion the salad into bowls, grab your fork, and dive in!
Notes
Feel free to experiment with different vegetables and dressings. Store leftovers in airtight containers in the fridge and consume within 2-3 days.
