Preparation
- In a large mixing bowl, pour in the coconut milk. If separated, stir well until blended.
- In a separate bowl, whip the heavy cream along with the powdered sugar and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the coconut milk, being careful not to deflate the mixture too much. Add the shredded coconut and stir until evenly distributed.
Layering
- In your serving dish, add a layer of graham cracker crumbs as the base.
- Follow with a layer of the coconut mixture. Repeat the process until reaching the top, finishing with shredded coconut for garnish.
Chilling and Serving
- Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow flavors to meld and dessert to set.
- Scoop out the layered dessert to serve, and enjoy your trip to coconut heaven!
Notes
Use high-quality coconut milk for richer flavor. Can be made a day in advance for best flavor. Customize with layers of chocolate or vanilla pudding if desired.
