Ingredients

For the Coconut Cream Layer
  • 1 can coconut milk 13.5 oz, ensure fully blended
  • 1 cup heavy whipping cream for whipping
  • 1/2 cup powdered sugar for sweetening the whipped cream
  • 1 teaspoon vanilla extract adds flavor
  • 1/2 cup unsweetened shredded coconut for mixing into the cream
For the Base and Garnish
  • 1/2 cup graham cracker crumbs to create the base layer
  • 1/2 cup shredded coconut for garnish on top

Method

Preparation
  1. In a large mixing bowl, pour in the coconut milk. If separated, stir well until blended.
  2. In a separate bowl, whip the heavy cream along with the powdered sugar and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the coconut milk, being careful not to deflate the mixture too much. Add the shredded coconut and stir until evenly distributed.
Layering
  1. In your serving dish, add a layer of graham cracker crumbs as the base.
  2. Follow with a layer of the coconut mixture. Repeat the process until reaching the top, finishing with shredded coconut for garnish.
Chilling and Serving
  1. Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow flavors to meld and dessert to set.
  2. Scoop out the layered dessert to serve, and enjoy your trip to coconut heaven!

Notes

Use high-quality coconut milk for richer flavor. Can be made a day in advance for best flavor. Customize with layers of chocolate or vanilla pudding if desired.
