Preparation
- In a large mixing bowl, combine the coconut milk, granulated sugar, and vanilla extract. Whisk together until the sugar dissolves.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the coconut mixture until well combined.
Layering the Dessert
- In your serving dish, spread a layer of graham cracker crumbs across the bottom. Follow that with a layer of the coconut cream mixture. Sprinkle some shredded coconut on top.
- Continue layering the graham cracker crumbs and coconut cream until you reach the top of the dish. Finish with a layer of whipped cream and toasted coconut on top.
Chill
- Cover the dessert and place it in the fridge for at least 2 hours to allow the layers to set.
Serve
- Once chilled, scoop out servings and add more toppings if desired.
Notes
For optimal taste, serve chilled rather than at room temperature. Keep leftovers covered in the fridge for about 3 days, or freeze for up to a month.
