Whipped Cream
  • 1 cup heavy whipping cream For fluffiness and richness.
Layering Ingredients
  • ½ cup sweetened shredded coconut For extra coconut goodness.
  • 1 package store-bought graham cracker crumbs To create a delightful crust.
  • to taste fresh fruit or extra coconut for topping Get creative with toppings.

Method
 

Preparation
  1. In a large mixing bowl, combine the coconut milk, granulated sugar, and vanilla extract. Whisk together until the sugar dissolves.
  2. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the coconut mixture until well combined.
Layering the Dessert
  1. In your serving dish, spread a layer of graham cracker crumbs across the bottom. Follow that with a layer of the coconut cream mixture. Sprinkle some shredded coconut on top.
  2. Continue layering the graham cracker crumbs and coconut cream until you reach the top of the dish. Finish with a layer of whipped cream and toasted coconut on top.
Chill
  1. Cover the dessert and place it in the fridge for at least 2 hours to allow the layers to set.
Serve
  1. Once chilled, scoop out servings and add more toppings if desired.

Notes

For optimal taste, serve chilled rather than at room temperature. Keep leftovers covered in the fridge for about 3 days, or freeze for up to a month.
