  • 3 large Eggs, separated into whites and yolks Room temperature for best results
  • 3 oz Cream Cheese, softened to room temperature Must be well softened for a smooth blend
  • 1/4 tsp Baking Powder
  • a pinch Salt Optional, to taste

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whip the egg whites using a hand mixer at medium speed until soft peaks form.
  3. In another bowl, blend the cream cheese, egg yolks, baking powder, and salt until smooth and creamy.
  4. Gently fold the whipped egg whites into the cream cheese mixture, being careful not to deflate the airiness.
  5. Dollop the mixture onto the prepared baking sheet, shaping them into rounds (approximately 3-4 inches in diameter). You should have about 6-8 pieces.
  6. Bake in the preheated oven for about 25 to 30 minutes or until the tops are golden brown.
  7. Remove from the oven and let them cool completely on a wire rack before serving.

Notes

For best results, ensure eggs are at room temperature and cream cheese is softened. Experiment with spices or herbs for added flavor.
