Preparation
- Start by boiling a large pot of salted water. Once boiling, add 8 ounces of pasta and cook until al dente, about 8-10 minutes. Drain and let cool.
- While the pasta cools, wash and dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and slice the black olives.
Mixing
- In a large mixing bowl, combine the cooled pasta, diced cucumber, halved cherry tomatoes, diced red onion, sliced black olives, and cubed mozzarella.
- In a separate bowl, whisk together olive oil, vinegar, Italian seasoning, and salt and pepper to taste.
- Drizzle the dressing over the pasta and vegetable mixture, then gently toss until fully combined.
- Sprinkle chopped fresh basil over the top and give it another gentle toss.
Serving
- Chill in the refrigerator for at least 30 minutes before serving for the best flavors.
