Dressing

Method
 

Preparation
  1. Start by boiling a large pot of salted water. Once boiling, add 8 ounces of pasta and cook until al dente, about 8-10 minutes. Drain and let cool.
  2. While the pasta cools, wash and dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and slice the black olives.
Mixing
  1. In a large mixing bowl, combine the cooled pasta, diced cucumber, halved cherry tomatoes, diced red onion, sliced black olives, and cubed mozzarella.
  2. In a separate bowl, whisk together olive oil, vinegar, Italian seasoning, and salt and pepper to taste.
  3. Drizzle the dressing over the pasta and vegetable mixture, then gently toss until fully combined.
  4. Sprinkle chopped fresh basil over the top and give it another gentle toss.
Serving
  1. Chill in the refrigerator for at least 30 minutes before serving for the best flavors.

Notes

Feel free to customize toppings such as swapping olives for capers or adding protein like grilled chicken. Prepare a day ahead for better flavor melding.
