  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
Add-ins
  • 2 medium apples, peeled, cored, and diced
  • 1/2 cup brown sugar for layering

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5-inch loaf pan with non-stick spray or butter.
Mixing Dry Ingredients
  1. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
Making the Batter
  1. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the milk and vanilla until just combined.
Combining Mixtures
  1. Gradually add the dry mix to the wet ingredients, stirring until fully incorporated.
  2. Fold in the diced apples gently.
Baking
  1. Pour half of the batter into the prepared loaf pan.
  2. Sprinkle half of the brown sugar on this layer.
  3. Add the remaining batter, then sprinkle with the remaining brown sugar and dash of cinnamon.
  4. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow cooling in the pan for 15 minutes before transferring to a wire rack.

Notes

For best results, use a mix of sweet and tart apples. Keep leftovers wrapped in plastic for up to 3 days at room temperature.
