Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan with non-stick spray or butter.
Mixing Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
Making the Batter
- In another bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla until just combined.
Combining Mixtures
- Gradually add the dry mix to the wet ingredients, stirring until fully incorporated.
- Fold in the diced apples gently.
Baking
- Pour half of the batter into the prepared loaf pan.
- Sprinkle half of the brown sugar on this layer.
- Add the remaining batter, then sprinkle with the remaining brown sugar and dash of cinnamon.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow cooling in the pan for 15 minutes before transferring to a wire rack.
Notes
For best results, use a mix of sweet and tart apples. Keep leftovers wrapped in plastic for up to 3 days at room temperature.
