Ingredients
  

For the Dough
  • 2 cups warm water (about 110°F) Ensure water is not too hot to kill the yeast.
  • 1 packet instant yeast (2 ¼ teaspoons)
  • ¼ cup granulated sugar For the dough
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • ¼ cup baking soda For the baking soda bath
  • 1 large egg Beaten, for egg wash.
For the Topping
  • ½ cup granulated sugar For coating
  • 2 teaspoons ground cinnamon For coating

Method
 

Preparation
  1. In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
  2. Stir in the salt and gradually add the flour, mixing until a dough forms.
Kneading and Rising
  1. Transfer the dough to a floured surface and knead for about 5-7 minutes, or until smooth.
  2. Place the kneaded dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
Shaping and Baking
  1. Preheat your oven to 425°F (220°C).
  2. Punch down the dough and divide it into equal-sized pieces (around 10-12). Roll each piece into long sticks, about 12 inches in length.
  3. In a large pot, bring 4 cups of water to a simmer and add the baking soda carefully. Boil each pretzel stick for about 30 seconds, then remove and place them on a parchment-lined baking sheet.
  4. Brush each pretzel stick with the beaten egg for a shiny finish. Bake in the preheated oven for about 12-15 minutes or until golden brown.
Topping
  1. While the pretzels are baking, mix the granulated sugar and cinnamon together in a bowl. Once the pretzel sticks are out of the oven, immediately roll them in the cinnamon sugar mixture.

Notes

If your dough feels too sticky, add a little more flour until it is easier to handle. You can dip these pretzel sticks in chocolate or caramel sauce for an extra treat!
