Ingredients
  

For the Cinnamon Roll Base
  • 2 cans refrigerated cinnamon roll dough
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
For the Cheesecake Layer
  • 8 oz cream cheese, softened Ensure it's at room temperature for best mixing.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
For the Topping
  • 1/4 cup icing or glaze (provided in the cinnamon roll dough can)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 baking dish.
  2. Open the cans of refrigerated cinnamon roll dough and slice each roll into quarters. In a large bowl, toss the cinnamon roll pieces with sugar and ground cinnamon until well coated.
  3. Spread half of the cinnamon roll mixture evenly across the bottom of the greased baking dish. Press it down gently to form a base.
  4. In a separate bowl, combine softened cream cheese, sugar, vanilla, and eggs. Beat until smooth and creamy, ensuring there are no lumps.
  5. Pour the cheesecake filling over the cinnamon roll base and spread it evenly. Then, sprinkle the remaining cinnamon roll pieces over the cheesecake layer.
Baking
  1. Place the dish in the preheated oven and bake for about 25-30 minutes or until the center is set and the edges are slightly golden brown.
Cooling and Serving
  1. Allow the bars to cool for at least 10 minutes, then drizzle with icing from the cinnamon roll can.
  2. Cut into squares and enjoy your deliciously gooey creation!
