Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup apple cider The sweeter, the better!
  • 1/2 cup sugar Granulated
  • 1/2 cup brown sugar Packed
  • 1/4 cup vegetable oil
  • 1 large egg
Additions
  • 1 cup diced apples Preferably Granny Smith or Honeycrisp

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  2. In a bowl, whisk together the flour, baking powder, ground cinnamon, and salt.
  3. In another bowl, combine the apple cider, sugar, brown sugar, vegetable oil, and egg. Mix until well combined.
  4. Gradually fold the dry mixture into the wet mixture, being careful not to overmix; a few lumps are okay!
  5. Gently fold in the diced apples until evenly distributed.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the tin for five minutes before transferring them to a wire rack. Enjoy while warm!

Notes

Choose tart apples for balancing sweetness. Adjust spices as desired. Muffins can be frozen for up to three months.
