Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
- In a bowl, whisk together the flour, baking powder, ground cinnamon, and salt.
- In another bowl, combine the apple cider, sugar, brown sugar, vegetable oil, and egg. Mix until well combined.
- Gradually fold the dry mixture into the wet mixture, being careful not to overmix; a few lumps are okay!
- Gently fold in the diced apples until evenly distributed.
- Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the tin for five minutes before transferring them to a wire rack. Enjoy while warm!
Notes
Choose tart apples for balancing sweetness. Adjust spices as desired. Muffins can be frozen for up to three months.
