Preparation
- In a mixed bowl, combine the lime juice, chopped cilantro, minced garlic, olive oil, ground cumin, salt, and pepper.
- Add the chicken thighs to the marinade, ensuring they’re well coated. Let them marinate for at least 15-20 minutes (or up to 2 hours) for maximum flavor.
Cooking
- Preheat your grill (or grill pan) over medium-high heat.
- Remove the chicken from the marinade but reserve the leftover marinade.
- Place the chicken thighs on the grill and cook for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C) and have nice grill marks.
- During the last couple of minutes of grilling, brush some of the reserved marinade on the chicken for added flavor.
Serving
- Allow the chicken to rest for about 5 minutes before slicing. Serve with extra cilantro and lime on the side for flair.
Notes
For the best flavor, allow for longer marination. Try serving with cilantro lime rice or creamy guacamole.
