For the filling
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon for filling
For the French Toast
  • 8 slices thick-cut bread (like brioche or challah)
  • 1 cup milk
  • 4 large eggs
  • ½ teaspoon salt
  • 1 tablespoon butter for cooking
For the coating
  • ½ cup granulated sugar for coating
  • 1 tablespoon cinnamon for coating

Preparation
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and 1 teaspoon of cinnamon until smooth. Set aside.
  2. Take a slice of thick bread and spread a generous amount of the cream cheese mixture on one side. Place another slice on top to form a sandwich. Repeat with the remaining slices.
  3. In another bowl, whisk together the milk, eggs, and salt.
Cooking
  1. Dip each sandwich into the egg mixture, ensuring all sides are coated and slightly soaked.
  2. In a skillet over medium heat, melt butter. Cook each sandwich for about 3-4 minutes on each side, or until golden brown and crisp.
  3. In a shallow dish, mix the granulated sugar and remaining cinnamon. Once cooked, roll each slice of French toast in this mixture.
Serving
  1. Serve warm with maple syrup, whipped cream, or fresh berries.

Notes

If cream cheese isn't preferred, substitute it with ricotta or mascarpone. Avoid over-soaking the bread to maintain its texture. Cook on medium heat to prevent burning.
