For the Panna Cotta
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 cup bittersweet or semi-sweet chocolate, chopped
  • 2 1/4 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Preparation
  1. In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  2. In a medium saucepan, combine the heavy cream, milk, sugar, and a pinch of salt. Heat over medium heat, stirring until the sugar dissolves, and the mixture is hot but not boiling.
  3. Remove the saucepan from heat and stir in the chopped chocolate until it melts completely and the mixture is smooth.
  4. Add the bloomed gelatin to the warm chocolate mixture and stir until fully dissolved.
  5. Stir in the vanilla extract for an extra flavor boost.
  6. Divide the mixture into dessert cups or molds and refrigerate for at least 4 hours, or until set.
  7. Once set, garnish with whipped cream, berries, or chocolate shavings, and enjoy!

Notes

To ensure a smooth texture, dissolve the gelatin thoroughly and avoid boiling the cream mixture. Adjust sugar to taste and feel free to experiment with toppings and chocolate types.
