Ingredients
  

For the Chocolate Shell
  • 1 cup semi-sweet chocolate chips Use high-quality chocolate for the best taste.
For the Mint Filling
  • 1/2 cup heavy cream
  • 1/2 teaspoon peppermint extract Adjust to taste if you prefer a stronger mint flavor.
  • 1 tablespoon icing sugar
  • Green food coloring (optional) Use to match occasion themes.
  • Sea salt for garnish (optional)

Method
 

Prepare the Chocolate Shell
  1. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until fully melted and smooth.
Create the Mint Filling
  1. In a separate bowl, whisk together the heavy cream, peppermint extract, icing sugar, and a drop of green food coloring until the mixture forms soft peaks. This should take about 3-5 minutes.
Form the Chocolate Shells
  1. Using silicone molds or mini muffin tins, pour a small amount of melted chocolate into each mold, spreading it evenly.
  2. Refrigerate for about 10 minutes until set.
Fill with Mint Cream
  1. After the chocolate has set, spoon in the mint filling over the chocolate base, filling each mold to the top.
Top with More Chocolate
  1. Pour additional melted chocolate over the mint cream layer and spread evenly.
  2. Refrigerate until set, about another 15–20 minutes.
Serve and Enjoy
  1. Once set, gently pop the Chocolate Mint Creams out of the molds, sprinkle with a pinch of sea salt if desired, and serve.

Notes

Store in an airtight container in the refrigerator for up to a week. For longer storage, consider freezing them.
