Method
Prepare the Chocolate Shell
- Melt the semi-sweet chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until fully melted and smooth.
Create the Mint Filling
- In a separate bowl, whisk together the heavy cream, peppermint extract, icing sugar, and a drop of green food coloring until the mixture forms soft peaks. This should take about 3-5 minutes.
Form the Chocolate Shells
- Using silicone molds or mini muffin tins, pour a small amount of melted chocolate into each mold, spreading it evenly.
- Refrigerate for about 10 minutes until set.
Fill with Mint Cream
- After the chocolate has set, spoon in the mint filling over the chocolate base, filling each mold to the top.
Top with More Chocolate
- Pour additional melted chocolate over the mint cream layer and spread evenly.
- Refrigerate until set, about another 15–20 minutes.
Serve and Enjoy
- Once set, gently pop the Chocolate Mint Creams out of the molds, sprinkle with a pinch of sea salt if desired, and serve.
Notes
Store in an airtight container in the refrigerator for up to a week. For longer storage, consider freezing them.
