Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts Use fresh chicken for best results.
  • 1 tablespoon olive oil For marinating and cooking.
  • 2 cloves garlic Minced.
  • 1/2 juice lemon Juice of half a lemon.
  • to taste salt and pepper For seasoning.
For the Tzatziki Sauce
  • 1 cup plain Greek yogurt Use full-fat for creaminess.
  • 1 cup cucumber Grated.
  • 1 tablespoon fresh dill Chopped.
For Assembly
  • 2 cups fresh vegetables Lettuce, tomatoes, cucumbers, chopped.
  • optional: pita bread For added crunch.

Method
 

Preparation
  1. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper. Add the chicken breasts and let them marinate for at least 15 minutes.
  2. In another bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and a pinch of salt. Stir everything together and set aside to let the flavors meld.
Cooking
  1. Heat a skillet over medium-high heat. Add the marinated chicken and grill for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing.
Assembly
  1. In serving bowls, start with a base of fresh lettuce. Top with sliced chicken, chopped tomatoes, and cucumbers. Drizzle the tzatziki sauce generously over the top.

Notes

Let the chicken marinate longer for extra flavor. For lower-carb options, substitute chicken with grilled shrimp or veggies like zucchini. Don’t skimp on the tzatziki sauce!
