  • 1 pound of boneless, skinless chicken breasts, cubed
  • 3 tablespoons of olive oil
  • 4 cloves of garlic, minced Use fresh garlic for best flavor.
  • 1 cup of chicken broth
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese Freshly grated is recommended.
  • 2 cups of cooked rice (preferably long-grain or jasmine)
  • Fresh parsley for garnish chopped

Preparation
  1. Cook the rice according to the package instructions and set aside.
  2. In a large pan over medium heat, add the olive oil. Once hot, add the cubed chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Pour in the chicken broth and bring to a gentle simmer. Add the heavy cream, stirring to combine. Let simmer for another 5 minutes.
  5. Gradually add the grated Parmesan cheese, stirring until melted and creamy. Taste and adjust seasoning as necessary.
  6. Stir in the cooked rice, ensuring it is well-coated with the sauce. Cook for an additional minute to meld flavors.
  7. Plate the Chicken Scampi and garnish with fresh parsley. Serve and enjoy!

Notes

Use fresh ingredients for the best flavor. Don't rush the sautéing process for the chicken. Feel free to experiment with herbs like basil or oregano.
