Chicken Salad Sandwich Recipe

A delicious chicken salad sandwich made with tender chicken, creamy mayo, crisp vegetables, and seasonings, all packed into a soft sandwich. Perfect for lunch or a light dinner!

Equipment

  • Mixing bowl
  • Spoon or spatula (for stirring)
  • Knife for chopping
  • Cutting board
  • Sandwich bread (whole wheat, white, or your favorite variety)

Ingredients
  

  • 2 cups cooked chicken shredded or diced (rotisserie chicken works great)
  • ½ cup mayonnaise or Greek yogurt for a lighter version
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon chopped fresh parsley optional
  • 1 celery stalk finely chopped
  • 1 small red onion finely chopped (optional)
  • Salt and pepper to taste
  • 4 slices of bread white, whole wheat, or your choice
  • Lettuce leaves optional
  • Sliced tomato optional
  • Pickles optional

Instructions
 

  • Prepare the Chicken Salad Filling
  • In a large mixing bowl, combine the shredded or diced chicken, mayonnaise, Dijon mustard, and lemon juice. Stir until the chicken is evenly coated.
  • Add Vegetables and Seasonings
  • Add the chopped celery, red onion (if using), and fresh parsley to the chicken mixture. Stir again until well combined. Taste and season with salt and pepper as needed.
  • Assemble the Sandwiches
  • Lay two slices of bread on a clean surface. Spoon a generous amount of chicken salad onto one slice. Top with lettuce, tomato, and pickles if desired. Place the second slice of bread on top to complete the sandwich.
  • Serve
  • Serve immediately, or wrap the sandwiches in parchment paper or plastic wrap for an easy-to-go meal.
