Chicken Salad Sandwich Recipe
A delicious chicken salad sandwich made with tender chicken, creamy mayo, crisp vegetables, and seasonings, all packed into a soft sandwich. Perfect for lunch or a light dinner!

Sandwich bread (whole wheat, white, or your favorite variety)
- 2 cups cooked chicken shredded or diced (rotisserie chicken works great)
- ½ cup mayonnaise or Greek yogurt for a lighter version
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon chopped fresh parsley optional
- 1 celery stalk finely chopped
- 1 small red onion finely chopped (optional)
- Salt and pepper to taste
- 4 slices of bread white, whole wheat, or your choice
- Lettuce leaves optional
- Sliced tomato optional
- Pickles optional
Prepare the Chicken Salad Filling
In a large mixing bowl, combine the shredded or diced chicken, mayonnaise, Dijon mustard, and lemon juice. Stir until the chicken is evenly coated.
Add Vegetables and Seasonings
Add the chopped celery, red onion (if using), and fresh parsley to the chicken mixture. Stir again until well combined. Taste and season with salt and pepper as needed.
Assemble the Sandwiches
Lay two slices of bread on a clean surface. Spoon a generous amount of chicken salad onto one slice. Top with lettuce, tomato, and pickles if desired. Place the second slice of bread on top to complete the sandwich.
Serve
