  • 2 cups cooked chicken, shredded
  • 1 cup diced celery
  • 1/2 cup red grapes, halved
  • 1/2 cup sliced almonds optional
Dressing
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • to taste Salt and pepper

Method
 

Preparation
  1. Cook your chicken using your preferred method (boiling, roasting, or grilling). Let it cool before shredding it into bite-sized pieces.
  2. In a large bowl, combine the mayonnaise, Dijon mustard, and apple cider vinegar. Whisk until smooth.
  3. Add the shredded chicken, diced celery, red grapes, and sliced almonds (if using) to the dressing mixture. Stir well until everything is evenly coated.
  4. Sprinkle salt and pepper as desired. Tasting is important!
  5. Cover the salad and refrigerate for at least 30 minutes before serving.
  6. Enjoy in a sandwich, on a bed of greens, or straight from the bowl!

Notes

For a healthier version, opt for Greek yogurt instead of mayonnaise. You can also use rotisserie chicken to save time. Add chopped apples or walnuts for a crunchier texture. Store in an airtight container in the refrigerator for up to 3 days.
