Preparation
- Cook your chicken using your preferred method (boiling, roasting, or grilling). Let it cool before shredding it into bite-sized pieces.
- In a large bowl, combine the mayonnaise, Dijon mustard, and apple cider vinegar. Whisk until smooth.
- Add the shredded chicken, diced celery, red grapes, and sliced almonds (if using) to the dressing mixture. Stir well until everything is evenly coated.
- Sprinkle salt and pepper as desired. Tasting is important!
- Cover the salad and refrigerate for at least 30 minutes before serving.
- Enjoy in a sandwich, on a bed of greens, or straight from the bowl!
Notes
For a healthier version, opt for Greek yogurt instead of mayonnaise. You can also use rotisserie chicken to save time. Add chopped apples or walnuts for a crunchier texture. Store in an airtight container in the refrigerator for up to 3 days.
