Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with olive oil.
- In a large bowl, mix together the shredded chicken and marinara sauce. Add salt, pepper, and Italian seasoning for an extra flavor boost!
- Spread half of the chicken mixture into the bottom of the prepared baking dish evenly.
- Layer half of the mozzarella cheese and half of the Parmesan cheese over the chicken layer.
- Add the remaining chicken mixture on top, ensuring it’s evenly spread. Top with the rest of the mozzarella and Parmesan cheese.
- Alternatively, you can sprinkle the almond flour on top if you want a crispy topping.
- Place in the oven and bake for approximately 30 minutes, or until the cheese is bubbly and golden brown.
- Once out of the oven, let the casserole sit for about 5 minutes before serving.
- Top with fresh chopped basil for an herbaceous finish.
Notes
For a crunchier topping, extend the baking time for the last few minutes. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven to maintain the cheesy texture.
