  • 2 cups cooked chicken, shredded
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup almond flour for a keto option
  • 2 tablespoons Italian seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil for greasing the dish
  • 1/2 cup fresh basil, chopped optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. In a large bowl, mix together the shredded chicken and marinara sauce. Add salt, pepper, and Italian seasoning for an extra flavor boost!
  3. Spread half of the chicken mixture into the bottom of the prepared baking dish evenly.
  4. Layer half of the mozzarella cheese and half of the Parmesan cheese over the chicken layer.
  5. Add the remaining chicken mixture on top, ensuring it’s evenly spread. Top with the rest of the mozzarella and Parmesan cheese.
  6. Alternatively, you can sprinkle the almond flour on top if you want a crispy topping.
  7. Place in the oven and bake for approximately 30 minutes, or until the cheese is bubbly and golden brown.
  8. Once out of the oven, let the casserole sit for about 5 minutes before serving.
  9. Top with fresh chopped basil for an herbaceous finish.

Notes

For a crunchier topping, extend the baking time for the last few minutes. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven to maintain the cheesy texture.
