  • 2 pieces boneless, skinless chicken breasts about 1 pound
  • 1 tbsp olive oil
  • 1 tbsp fajita seasoning store-bought or homemade
For the Vegetables
  • 1 medium onion, sliced
  • 1 piece bell pepper, sliced any color
For the Bowl
  • 2 cups cooked rice white or brown
  • 1 cup black beans drained and rinsed
  • 1 cup corn fresh or frozen
  • 1 piece avocado, diced
  • 1 cup salsa mild, medium, or hot
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Method
 

Preparation
  1. Slice the chicken breasts into thin strips and marinate with olive oil and fajita seasoning.
Cooking
  1. Heat a skillet over medium-high heat and sear the marinated chicken strips until golden brown and cooked through, about 6-8 minutes.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, sauté sliced onion and bell pepper for about 5-6 minutes until tender but still crisp.
Assembly
  1. Start layering in serving bowls: begin with a base of cooked rice, followed by black beans, corn, and sautéed chicken and veggies.
  2. Top each bowl with diced avocado, salsa, and fresh cilantro. Serve lime wedges on the side.

Notes

Consider using beef or sautéed mushrooms for a vegetarian version. Chop veggies and marinate chicken in advance for quicker prep. Avoid overcrowding the skillet for better chicken browning.
