Ingredients
  

Grains
  • 2 cups cooked brown rice or quinoa
Chicken and Seasoning
  • 1 lb boneless, skinless chicken breast, cut into strips
  • 1 tablespoon olive oil
  • 2 teaspoons fajita seasoning
  • to taste salt and pepper
Vegetables
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 1 cup black beans, drained and rinsed
Toppings
  • 1 each avocado, sliced
  • to taste Fresh cilantro for garnish
  • to taste Optional toppings: salsa, shredded cheese, sour cream, lime wedges

Method
 

Cooking the Grains
  1. Start by cooking the brown rice or quinoa according to package instructions. Once done, set it aside.
Preparing the Chicken
  1. In a bowl, mix the chicken strips with the fajita seasoning, salt, and pepper until well-coated.
Cooking the Chicken
  1. Heat olive oil in a large skillet over medium heat. Once hot, add the seasoned chicken strips and cook until they are golden brown and cooked through (about 5-7 minutes). Remove from the skillet and set aside.
Sautéing the Vegetables
  1. In the same skillet, add the sliced bell peppers and onion. Sauté for about 5-6 minutes until tender and slightly charred.
Combining the Ingredients
  1. Add the black beans and cooked chicken back to the skillet with the vegetables, tossing everything together gently. Let it cook for an additional 2-3 minutes.
Assembling the Bowl
  1. In serving bowls, layer the cooked rice or quinoa, followed by the chicken and vegetable mixture. Top with avocado slices and any additional toppings of your choice.
Serving
  1. Garnish with fresh cilantro and a squeeze of lime, if desired. Dig in and savor each delicious bite!

Notes

For substitutions, feel free to swap out the chicken for grilled shrimp or crumbled tofu for a vegetarian delight. Prep the chicken and veggies ahead of time to save time on busy weeknights.
