Method

Preparation
  1. Cook the noodles according to the package instructions. Drain and set aside.
  2. In a large pan or wok, heat a tablespoon of cooking oil over medium-high heat. Add in the sliced chicken, seasoning it with a pinch of salt and pepper. Stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. Add a little more oil if needed to the same pan, and toss in the garlic and ginger. Stir-fry for about 30 seconds until fragrant.
  4. Add the mixed vegetables and cook for an additional 3-4 minutes until they are crisp-tender.
Combining Ingredients
  1. Return the chicken to the pan, then add the cooked noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together well, ensuring the noodles and chicken are thoroughly coated in sauce.
Serving
  1. Garnish with chopped green onions and serve hot!

Notes

Pair this dish with steamed dumplings, cucumber salad, or spring rolls for a delightful contrast. For a drink, a lovely green tea complements the meal nicely.
