Ingredients
  

Pasta and Vegetables
  • 2 cups pasta (your choice – penne, rotini, or fettuccine)
  • 2 cups broccoli florets, fresh or frozen
Chicken
  • 1 lb chicken breast, diced Ensure it's halal-certified.
Aromatics and Seasonings
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Parmesan cheese, for serving

Method
 

Cooking the Pasta
  1. In a pot of salted boiling water, add your choice of pasta. Cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside.
Sautéing the Chicken
  1. In a large pan, heat 2 tablespoons of olive oil over medium heat. Once hot, add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes or until the chicken is cooked through and golden brown. Remove the chicken from the pan and set aside.
Cooking the Broccoli
  1. In the same pan, add a touch more olive oil if needed, then add the minced garlic and sauté for about 30 seconds until fragrant. Add the broccoli florets and a bit of water (a tablespoon or two), cover the pan, and steam for about 3-4 minutes until bright green and tender.
Combining Ingredients
  1. Add the chicken back into the pan with the broccoli. Stir in the cooked pasta and a splash of reserved pasta water to combine everything. Continue stirring, ensuring the pasta gets coated in the garlic and olive oil.
Serving
  1. Dish out the Chicken and Broccoli Pasta onto plates or bowls. Finish with a generous sprinkle of Parmesan cheese for that extra creamy touch.

Notes

You can swap chicken with halal-certified beef or shrimp if you prefer. Make sure to cook the pasta and chicken simultaneously to save time. Avoid overcooking the broccoli to maintain its nutrients and texture.
