Chewy Chocolate Chip Cookies Recipe

Ingredients
  

  • ¾ cup unsalted butter melted and slightly cooled
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 1 large egg + 1 egg yolk room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips

Method
 

  1. Preheat the Oven and Prepare Baking Sheets
  2. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  3. Mix the Wet Ingredients
  4. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Beat together until smooth. Add the egg, egg yolk, and vanilla extract, and mix until well combined.
  5. Combine the Dry Ingredients
  6. In a separate bowl, whisk together the flour, baking soda, cornstarch, and salt.
  7. Add the Dry Ingredients to the Wet Ingredients
  8. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Be careful not to overmix, as this can make the cookies tougher.
  9. Fold in the Chocolate Chips
  10. Using a spatula, gently fold in the chocolate chips until evenly distributed throughout the dough.
  11. Chill the Dough (Optional)
  12. For thicker cookies, cover and refrigerate the dough for 30 minutes. This step is optional but helps create a chewier texture.
  13. Scoop and Shape the Cookies
  14. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  15. Bake the Cookies
  16. Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers look slightly underbaked. They’ll firm up as they cool, giving them that perfect chewy center.
  17. Cool and Serve
  18. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a cooling rack to cool completely.
