Preparation
- Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper for easy removal.
- Make the Brownie Base: In a large saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in granulated sugar, followed by the eggs, and vanilla extract until well combined. Mix flour, cocoa powder, and salt in a separate bowl. Gradually stir the dry ingredients into the wet until you achieve a smooth brownie batter. Pour half of the brownie batter into the prepared baking dish, spreading evenly.
- Prepare the Cheesecake Layer: In a mixing bowl, beat cream cheese until smooth. Add granulated sugar and blend until combined. Mix in eggs and vanilla extract until the mixture is fluffy. Pour this cheesecake mixture over the brownie base, spreading evenly.
- Add the Remaining Brownie Batter: Carefully drop spoonfuls of the remaining brownie batter on top of the cheesecake layer. It doesn’t have to cover it completely; a little swirly design adds a nice touch!
Baking
- Bake: Place the dish in the preheated oven and bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean (it may have some cheesecake on it).
- Top with Cherries: Allow the brownies to cool before generously topping them with cherry pie filling. Cut into squares and serve!
