  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can (10 oz) Ro-Tel diced tomatoes with green chilies Add with juice for more flavor.
  • 1 can (10.5 oz) cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup shredded cheddar cheese Reserve half for topping.
  • 1 bag (32 oz) frozen tater tots Arrange in a single layer on top.
  • 1/2 cup diced onion For added flavor.
  • to taste salt and pepper Season generously.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef with the diced onion until the beef is no longer pink. Drain any excess grease.
  • To the skillet, add the Ro-Tel diced tomatoes (with juice), cream of chicken soup, and salt and pepper. Stir everything together until well combined.

Baking

  • In a greased baking dish, spread the beef mixture evenly. Sprinkle half of the shredded cheddar cheese over the beef.
  • Top the beef and cheese with a single layer of frozen tater tots, arranging them neatly.
  • Place the casserole in the preheated oven and bake for about 25 minutes, or until the tater tots are golden brown and crispy.
  • Remove the casserole from the oven and sprinkle the remaining cheddar cheese on top. Bake for an additional 5 minutes until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 20-25 minutes.
