Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef with the diced onion until the beef is no longer pink. Drain any excess grease.
- To the skillet, add the Ro-Tel diced tomatoes (with juice), cream of chicken soup, and salt and pepper. Stir everything together until well combined.
Baking
- In a greased baking dish, spread the beef mixture evenly. Sprinkle half of the shredded cheddar cheese over the beef.
- Top the beef and cheese with a single layer of frozen tater tots, arranging them neatly.
- Place the casserole in the preheated oven and bake for about 25 minutes, or until the tater tots are golden brown and crispy.
- Remove the casserole from the oven and sprinkle the remaining cheddar cheese on top. Bake for an additional 5 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 20-25 minutes.
