Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
- Toss in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the ricotta, shredded mozzarella, grated Parmesan, and spinach mixture. Season with salt and pepper, then stir until well mixed.
- Take the loaf of bread and cut a slit down the center lengthwise, creating a pocket for the cheese filling.
- Spoon the cheesy spinach mixture into the pocket of the bread, generously filling it.
Baking
- Wrap the stuffed bread in aluminum foil and place it in the preheated oven. Bake for 20-25 minutes, or until the cheese is melted and the bread is golden brown.
- Once done, carefully unwrap the foil, let it cool for a few minutes, slice, and enjoy!
Notes
For extra flavor, try adding different cheeses like feta or cheddar and consider tossing in any leftover vegetables.
