  • 1 loaf loaf of bread (French or Italian) Choose a loaf that can be easily stuffed.
  • 2 cups fresh spinach (roughly chopped) Fresh spinach is preferred for flavor and texture.
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese For a creamy and melty texture.
  • ½ cup grated Parmesan cheese Adds a sharp flavor.
  • 2 cloves garlic (minced) Enhances the overall flavor.
  • to taste Salt and pepper Season to your preference.
  • 2 tablespoons olive oil For sautéing the garlic and spinach.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  3. Toss in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the ricotta, shredded mozzarella, grated Parmesan, and spinach mixture. Season with salt and pepper, then stir until well mixed.
  5. Take the loaf of bread and cut a slit down the center lengthwise, creating a pocket for the cheese filling.
  6. Spoon the cheesy spinach mixture into the pocket of the bread, generously filling it.
Baking
  1. Wrap the stuffed bread in aluminum foil and place it in the preheated oven. Bake for 20-25 minutes, or until the cheese is melted and the bread is golden brown.
  2. Once done, carefully unwrap the foil, let it cool for a few minutes, slice, and enjoy!

Notes

For extra flavor, try adding different cheeses like feta or cheddar and consider tossing in any leftover vegetables.
