Preparation
- Preheat your oven to 400°F (200°C).
- Wash and cut the Yukon potatoes in half or quarters.
- In a large mixing bowl, toss the cut potatoes with olive oil, ranch seasoning, salt, and pepper until well-coated.
- Spread the potatoes evenly on a large baking sheet.
Cooking
- Bake in the oven for about 25 minutes, turning them halfway through.
- Add shredded cheese on top of the potatoes during the last 5 minutes of baking.
- Remove and garnish with fresh chives or parsley if desired, and serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. They freeze well too; just ensure they are cool before freezing.
