  • 2 pounds baby Yukon Gold potatoes (halved or quartered) Choose uniform-sized potatoes for even cooking.
  • 1 cup shredded cheddar cheese Can substitute with other cheese types for variation.
  • 1 packet ranch seasoning mix
  • 3 tablespoons olive oil
  • to taste salt and pepper Adjust based on personal preference.
  • optional Fresh chives or parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the Yukon potatoes in half or quarters.
  3. In a large mixing bowl, toss the cut potatoes with olive oil, ranch seasoning, salt, and pepper until well-coated.
  4. Spread the potatoes evenly on a large baking sheet.
Cooking
  1. Bake in the oven for about 25 minutes, turning them halfway through.
  2. Add shredded cheese on top of the potatoes during the last 5 minutes of baking.
  3. Remove and garnish with fresh chives or parsley if desired, and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. They freeze well too; just ensure they are cool before freezing.
