Preparation
- Preheat your oven to 375°F (190°C).
- Pat the chicken breasts dry with a paper towel.
- Heat the olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper. Sear for about 3-4 minutes on each side until golden brown.
- While the chicken is cooking, combine the honey and Dijon mustard in a small bowl and stir until blended.
- Transfer the seared chicken to a baking dish. Pour the honey mustard mixture over the chicken and sprinkle the shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes, until the chicken is fully cooked and the cheese is bubbly and golden.
- Remove from the oven, let cool for a few minutes, and serve with rice, potatoes, or vegetables.
Notes
For optimal results, avoid overcooking the chicken to retain its juiciness. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 15 minutes.
