- Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it lightly.
- In a large bowl, combine the flour, baking powder, and salt. Whisk until well mixed.
- In another bowl, whisk together the buttermilk and melted butter. Slowly pour this mixture into the dry ingredients, stirring gently until just combined—don't overmix!
- Fold in the shredded mozzarella and minced garlic, ensuring an even distribution throughout the batter.
- Scoop the batter into the greased muffin tin, filling each cup about ¾ full.
- Sprinkle grated Parmesan on top of each muffin for that added cheesy goodness.
- Bake for about 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let them cool slightly before serving. Garnish with fresh parsley if desired!
