  • 3 large large onions, thinly sliced Use sweet yellow onions for best flavor.
  • 2 tablespoons olive oil For sautéing the onions.

  • 4 cups crusty bread, cubed Crusty bread holds up well against the liquid.
  • 2 cups shredded cheese (like Gruyère or Swiss) For topping and mixing.
  • 1 cup heavy cream Adds creaminess.
  • ¼ cup fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they become caramelized and golden brown, about 20-25 minutes. Stir frequently to prevent burning.
  2. Once the onions are caramelized, add vegetable broth, thyme, salt, and pepper. Allow the mixture to simmer for another 5-10 minutes, allowing the flavors to blend nicely.
  3. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cubed crusty bread and the caramelized onion mixture. Stir in the heavy cream and half of the shredded cheese until evenly distributed.
  4. Transfer the mixture to a greased casserole dish, then sprinkle the remaining cheese on top. Bake uncovered for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  5. Once out of the oven, let it cool for a few minutes before garnishing with fresh parsley. Serve warm and enjoy!

Notes

Use quality onions for the best flavor. Don't rush the caramelization process and feel free to experiment with different cheese types for varying flavors. Store leftovers in the refrigerator for 3-4 days or freeze for up to two months.
