  • 1 cup broccoli florets Fresh broccoli.
  • 1 bell pepper sliced Any color bell pepper.
  • 2 cloves garlic, minced Fresh garlic is preferred.
  • 1 tablespoon soy sauce
  • ½ cup chicken or vegetable broth
  • 1 cup shredded cheese Cheddar or mozzarella.
  • to taste Salt and pepper Used to season the dish.
  • Green onions for garnish Chopped.

Method
 

Cooking the Noodles
  1. Begin by boiling the flat rice noodles according to the package instructions. Once cooked, drain and set aside.
Sautéing the Vegetables
  1. In a large skillet or wok, heat the oil over medium-high heat. Add the sliced bell pepper and broccoli, cooking them for about 3-5 minutes until they start to get tender.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
Combining Ingredients
  1. Pour in the soy sauce and broth, stirring well to combine. Allow the mixture to simmer for a couple of minutes.
  2. Toss the cooked noodles into the skillet, gently stirring everything together until well combined.
Adding Cheese
  1. Gradually sprinkle in the shredded cheese, stirring continuously until it melts into a creamy sauce that coats the noodles beautifully.
Final Seasoning and Serving
  1. Taste and adjust the seasoning with salt and pepper as needed. Serve hot, garnished with fresh green onions for a pop of color and flavor.
