  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup salsa (mild, medium, or hot)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas

Preparation
  1. In a large skillet over medium-high heat, add the ground beef. Season with salt, pepper, cumin, chili powder, and garlic powder. Cook until browned, breaking it up with a spatula as it cooks, about 8-10 minutes.
  2. Once the beef is cooked, stir in the cooked rice, black beans, and salsa. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld together.
  3. Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
Assembly
  1. Spoon a generous portion of the beef mixture into the center of each tortilla. Sprinkle with shredded cheddar cheese, then fold the tortillas over the filling. Roll them up from the bottom, tucking in the sides as you go.
  2. If you’d like the cheese to melt further, return the burritos to the skillet, seam side down, and cook for 2-3 minutes on each side until lightly golden.

Notes

For substitutions, ground beef can be replaced with ground chicken or turkey (Halal-friendly). For a vegetarian version, use textured vegetable protein or extra beans and veggies.
