Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula.
- Once the beef is fully cooked, stir in about 1/2 cup of enchilada sauce and allow it to simmer for a couple of minutes.
Assembly and Baking
- Place a tortilla on a flat surface, spoon a generous amount of the beef mixture into the center, sprinkle cheese on top, and roll it up tightly.
- Arrange the rolled enchiladas seam-side down in a greased baking dish. Repeat until all tortillas are filled.
- Pour the remaining enchilada sauce over the top and sprinkle the remaining cheese across the dish.
- Bake for about 20 minutes, or until the cheese is bubbly and melted.
- Remove from oven, let it cool for a few minutes before serving, and top with your favorite toppings.
Notes
Consider pairing enchiladas with Mexican rice, garden salad, or refried beans. For toppings, add fresh cilantro, avocado slices, or sour cream.
