Ingredients
  

  • 4 large flour tortillas
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup whipped topping or whipped cream
  • 1/2 cup diced strawberries
  • 1/2 cup diced kiwi
  • 1/2 cup diced pineapple
  • 1/2 cup blueberries
  • 1 tablespoon honey optional, for extra sweetness

Instructions
 

  • Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy. Fold in the whipped topping and mix until well combined.
  • Prepare the Fruit: Dice the strawberries, kiwi, pineapple, and blueberries into small pieces. If you prefer, you can mix the fruit together in a small bowl.
  • Assemble the Roll-Ups: Lay out the flour tortillas on a clean surface. Spread a generous layer of the cheesecake filling on each tortilla, leaving a small border around the edges.
  • Add the Fruit: Evenly distribute the diced fruit on top of the cheesecake filling.
  • Roll and Slice: Carefully roll up each tortilla tightly, ensuring the filling and fruit are sealed inside. Slice the roll-ups into 1-2 inch pieces.
  • Serve and Enjoy: Arrange the roll-ups on a platter and serve immediately. For a little extra sweetness, drizzle with honey just before serving.
