Prepare the Cheese Mixture:
In a mixing bowl, combine shredded cheese, mashed potatoes (if using), cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
Shape the mixture into small balls, about 1 inch in diameter. Chill in the refrigerator for 15–20 minutes to firm up.
Bread the Cheese Balls:
Set up a breading station with three shallow plates: one with flour, one with beaten eggs, and one with breadcrumbs.
Roll each cheese ball in flour, dip in egg, and coat in breadcrumbs. For extra crispiness, repeat the egg and breadcrumb coating.
Fry the Cheese Balls:
Heat vegetable oil in a skillet or deep fryer to 350°F (175°C).
Fry the cheese balls in batches for 2–3 minutes, turning occasionally, until golden brown and crispy.
Remove with a slotted spoon and place on paper towels to drain excess oil.
Serve:
Serve warm with dipping sauces like marinara, ranch, or sweet chili sauce.
