Ingredients
  

Base Ingredients
  • 2 cups rolled oats
  • 1 cup nut butter (peanut butter, almond butter, or sunbutter)
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract (optional)
  • pinch salt
Mix-Ins
  • 1 cup mix-ins (chocolate chips, dried fruits, nuts, seeds, or coconut flakes) Customize based on personal preference

Method
 

Preparation
  1. Line an 8x8 inch baking dish with parchment paper, leaving some edges hanging.
  2. In a large mixing bowl, combine the rolled oats, nut butter, honey (or syrup), and optional vanilla. Stir until well mixed.
  3. Fold in your choice of mix-ins until evenly distributed.
  4. Transfer the mixture into the lined baking dish and firmly press into an even layer.
  5. Refrigerate for at least 1-2 hours to let the bars set.
  6. Lift the bars out of the pan using the parchment paper and cut them into squares or rectangles.

Notes

Store leftover bars in an airtight container in the refrigerator for up to one week. For longer storage, freeze wrapped bars for up to three months. To enjoy, thaw at room temperature or microwave for a few seconds.
