CARROT RAISIN SALAD RECIPE
Fresh, crunchy, and sweet, this Carrot Raisin Salad is a classic side dish with shredded carrots, plump raisins, and a creamy dressing. Perfect for picnics and potlucks!
- 4 cups carrots peeled and grated (about 5-6 medium carrots)
- 1 cup raisins
- ½ cup mayonnaise
- 2 tbsp Greek yogurt optional, for extra creaminess
- 1 tbsp honey or sugar optional, for added sweetness
- 1 tbsp apple cider vinegar or lemon juice
- Salt and pepper to taste
- ¼ cup chopped fresh parsley optional, for garnish
Prepare the Carrots:
Grate the carrots using a hand grater or a food processor with a shredding blade. Place them in a large mixing bowl.
Add Raisins:
Add the raisins to the bowl with the shredded carrots.
