CARROT RAISIN SALAD RECIPE

Fresh, crunchy, and sweet, this Carrot Raisin Salad is a classic side dish with shredded carrots, plump raisins, and a creamy dressing. Perfect for picnics and potlucks!

Equipment

  • Large mixing bowl
  • Whisk
  • Grater or food processor with a shredding attachment

Ingredients
  

  • 4 cups carrots peeled and grated (about 5-6 medium carrots)
  • 1 cup raisins
  • ½ cup mayonnaise
  • 2 tbsp Greek yogurt optional, for extra creaminess
  • 1 tbsp honey or sugar optional, for added sweetness
  • 1 tbsp apple cider vinegar or lemon juice
  • Salt and pepper to taste
  • ¼ cup chopped fresh parsley optional, for garnish

Instructions
 

  • Prepare the Carrots:
  • Grate the carrots using a hand grater or a food processor with a shredding blade. Place them in a large mixing bowl.
  • Add Raisins:
  • Add the raisins to the bowl with the shredded carrots.
  • Make the Dressing:
  • In a small bowl, whisk together the mayonnaise, Greek yogurt (if using), honey or sugar, and apple cider vinegar or lemon juice. Season with salt and pepper to taste.
  • Combine Salad and Dressing:
  • Pour the dressing over the carrot and raisin mixture. Toss well until everything is evenly coated.
