Ingredients
  

Main ingredients
  • 1 whole 12-14 pounds turkey
  • 1/4 cup Cajun seasoning
  • 1/4 cup olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 tablespoon dried thyme
  • Wood chips for smoking (hickory or mesquite)

Method
 

Preparation
  1. Thaw your turkey completely if frozen, which might take a few days. Once thawed, pat it dry with paper towels.
Seasoning
  1. In a mixing bowl, combine the Cajun seasoning, olive oil, salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.
Apply the Rub
  1. Gently separate the skin from the turkey breast using your fingers, being careful not to tear it. Apply the seasoning mix both under and on the outside of the skin.
Soaking Wood Chips
  1. Let the turkey marinate in the fridge for 2-3 hours (or overnight). Soak wood chips in water.
Prepare the Smoker
  1. Preheat your smoker to 225°F. Add soaked wood chips once ready.
Smoke the Turkey
  1. Place turkey breast-side up on the smoker grate. Smoke for 4-5 hours or until the internal temperature reaches 165°F.
Resting
  1. Allow the turkey to rest for 30 minutes before carving.
Serving
  1. Slice and serve warm atop a platter with your favorite sides.

Notes

If you can't find Cajun seasoning, create your own blend using spices like cayenne pepper, paprika, and dried herbs. Don’t rush the smoking process for juicy results, and ensure the turkey rests long enough to retain moisture. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
