Ingredients
  

For the Filling
  • 1 pre-made pie crust 1 pre-made pie crust (store-bought or homemade)
  • 1 tablespoon 1 tablespoon olive oil
  • 1 cup 1 cup onions, diced
  • 1 cup 1 cup bell peppers, diced
  • 1 cup 1 cup celery, diced
  • 3 cloves 3 cloves garlic, minced
  • 1 pound 1 pound shrimp, peeled and deveined
  • 1 cup 1 cup crab meat, picked through for shells
  • 1 cup 1 cup fish fillets (such as catfish or tilapia), cut into chunks
  • 1 cup 1 cup heavy cream
  • 2 cups 2 cups seafood stock (or chicken stock)
  • 2 tablespoons 2 tablespoons Cajun seasoning (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions, bell peppers, and celery. Sauté until the vegetables become tender, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add shrimp, crab meat, and fish chunks to the skillet. Stir gently to combine.
  5. Pour in the heavy cream and seafood stock. Add Cajun seasoning, and season with salt and pepper. Stir to combine and allow simmering for about 10 minutes, until seafood is cooked through and sauce thickens slightly.
  6. Roll out the pie crust in a pie dish, trimming off any excess dough.
  7. Carefully pour the seafood mixture into the crust, ensuring it's evenly distributed.
  8. Cover with the top layer of pie crust, pressing the edges to seal. Cut slits in the top crust to allow steam to escape.
  9. Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown.
  10. Once baked, let it cool slightly before slicing. Garnish with fresh parsley before serving.

Notes

To enhance your pot pie experience, serve with a light side salad or buttery garlic bread. Pair with white wine or lemonade. Customize seafood as desired, and check seasoning before baking.
