- Begin by boiling a pot of water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the shredded chicken and sauté for a few minutes until warm.
- Next, add the chicken broth, cream cheese, Cajun seasoning, salt, and pepper. Stir until the cream cheese melts and the mixture becomes smooth.
- Add the diced tomatoes and cooked pasta to the skillet. Toss everything together to ensure the pasta is well coated with the creamy sauce.
- Preheat your oven to 350°F (175°C). Transfer the pasta mixture into a greased baking dish. Top with shredded cheddar cheese.
- Place in the oven and bake for about 20 minutes or until the cheese is bubbly and golden brown.
- Once out of the oven, sprinkle with chopped green onions or parsley, if desired, and enjoy!
