  • 2 cups cooked chicken, shredded or diced
  • 8 ounces pasta (penne or rotini) Cooked until al dente
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese For topping
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

  • Optional chopped green onions or parsley For serving

Preparation
  1. Begin by boiling a pot of water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the shredded chicken and sauté for a few minutes until warm.
  3. Next, add the chicken broth, cream cheese, Cajun seasoning, salt, and pepper. Stir until the cream cheese melts and the mixture becomes smooth.
  4. Add the diced tomatoes and cooked pasta to the skillet. Toss everything together to ensure the pasta is well coated with the creamy sauce.
  5. Preheat your oven to 350°F (175°C). Transfer the pasta mixture into a greased baking dish. Top with shredded cheddar cheese.
  6. Place in the oven and bake for about 20 minutes or until the cheese is bubbly and golden brown.
  7. Once out of the oven, sprinkle with chopped green onions or parsley, if desired, and enjoy!

Notes

For an extra layer of flavor, serve with a crisp green salad or garlic bread. Customize by adding your favorite veggies or protein. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
