- Start by chopping your cabbage into bite-sized pieces, dicing the onion, and mincing the garlic.
Cooking
- In a large pot over medium heat, add the ground beef or turkey. Cook for 5-7 minutes, breaking it apart with a spoon until browned. Drain any excess fat if necessary.
- Add the diced onion and minced garlic to the pot. Stir and cook for an additional 3-4 minutes until the onion becomes translucent.
- Pour in the beef broth, followed by the chopped cabbage and diced tomatoes (including their juice). Stir everything together.
- Sprinkle the paprika, salt, and pepper into the pot. Mix well to combine the flavors.
- Stir in the uncooked rice, cover the pot, and bring the mixture to a boil. Once boiling, reduce the heat to low and let simmer for about 30 minutes or until the rice and cabbage are tender.
- Give it a taste and adjust the seasoning as needed.
- Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat gently on the stovetop over low heat, adding a splash of broth to regain flavor and texture.
