  • 1 head cabbage, chopped
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (optional) Add for a cheesy topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until soft and fragrant, about 2-3 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt and pepper, and cook until browned, around 5-7 minutes. Drain any excess fat if needed.
  4. Stir in the can of diced tomatoes (with their juices) and mix everything together. Allow this to simmer for about 5 minutes.
Assembly and Baking
  1. In a greased baking dish, create a layer of chopped cabbage at the bottom.
  2. Spoon half of the beef mixture over the cabbage, add another layer of cabbage, and then the remaining beef mixture on top.
  3. Finish with another layer of cabbage. If using cheese, sprinkle it evenly over the top layer.
  4. Cover the dish with aluminum foil and bake for 30 minutes. Then, uncover and bake for an additional 15 minutes, or until the cheese is bubbly and the edges are slightly crispy.
  5. Let it cool for a few minutes before serving. Serve with some fresh salad or bread on the side.

Notes

Feel free to swap out the ground beef with ground chicken or turkey for a lighter option. You can also throw in extra veggies like bell peppers or carrots. Keep an eye on the baking stage to avoid burning the cheese.
