  • 1 cup unsalted butter, softened Ensure the butter is softened to room temperature.
  • 1 cup granulated sugar
  • 2 large eggs At room temperature for better mixing.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour Measured accurately to avoid dry bars.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shelled pistachios, chopped Halal-compliant and adds crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix these dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped pistachios until evenly distributed.
  6. Grease a 9×13 inch baking dish or line with parchment paper, and spread the dough evenly into the pan.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until edges are light golden brown and a toothpick inserted in the center comes out clean.
  2. Let the bars cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  3. Dust with powdered sugar just before serving, if desired.
  4. Slice into equal bars and enjoy!

Notes

To store, keep in an airtight container at room temperature for up to a week or refrigerate for up to two weeks. For freezing, wrap tightly and keep for about three months. Reheat in the oven at 300°F (150°C) for 5-10 minutes.
