Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix these dry ingredients into the wet ingredients until just combined.
- Fold in the chopped pistachios until evenly distributed.
- Grease a 9×13 inch baking dish or line with parchment paper, and spread the dough evenly into the pan.
Baking
- Bake in the preheated oven for 25-30 minutes, or until edges are light golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar just before serving, if desired.
- Slice into equal bars and enjoy!
Notes
To store, keep in an airtight container at room temperature for up to a week or refrigerate for up to two weeks. For freezing, wrap tightly and keep for about three months. Reheat in the oven at 300°F (150°C) for 5-10 minutes.
