Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13 inch baking pan with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Mixing
  1. In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  2. Mix in the egg and vanilla extract until well blended.
  3. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  4. Gently fold in the chopped pistachios, ensuring they are evenly distributed throughout the batter.
Baking
  1. Pour the batter into the prepared baking dish, spreading it evenly.
  2. Bake for 20-25 minutes or until the edges are lightly golden. A toothpick inserted into the center should come out clean.
  3. Allow to cool in the pan for about 10 minutes before lifting out using the parchment paper. Cut into bars and serve!
