Preparation
- Preheat your oven to 350°F (175°C).
- Line a 9×13 inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Mixing
- In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Mix in the egg and vanilla extract until well blended.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Gently fold in the chopped pistachios, ensuring they are evenly distributed throughout the batter.
Baking
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for 20-25 minutes or until the edges are lightly golden. A toothpick inserted into the center should come out clean.
- Allow to cool in the pan for about 10 minutes before lifting out using the parchment paper. Cut into bars and serve!
