Ingredients
  

For the crust
  • 1 crust pre-made pie crust or homemade, if you’re feeling adventurous!
For the filling
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • a pinch salt
  • 1/2 cup raisins or chopped nuts optional, for added texture

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing it lightly.
  2. Roll out the pie crust on a floured surface and cut it into rounds, then lightly press into the muffin tin cups.
  3. In a medium bowl, combine melted butter and brown sugar, mixing well until smooth.
  4. Add eggs one at a time, whisking until fully incorporated. Stir in the vanilla extract.
  5. Sprinkle in the flour and salt, then mix until it’s all combined.
  6. If you’re adding any optional ingredients like raisins or nuts, fold them into the mixture gently.
  7. Pour the filling evenly into each crust, filling them about three-quarters full.
Baking
  1. Bake in the oven for about 20 minutes or until the center is set but still slightly jiggles.
  2. Remove from the oven and allow them to cool for a few minutes before serving.

Notes

Chill your dough for at least 30 minutes to prevent shrinking if making a homemade crust. Don't overbake; aim for a set but not overly firm texture. Experiment with flavors by using maple syrup instead of vanilla extract or adding nutmeg for a unique twist. Great for gatherings or a cozy evening at home.
