Brunch Quesadillas: A Tasty and Versatile Morning Meal

Ingredients
  

  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk or cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese or your favorite cheese
  • 1/2 cup cooked bacon or sausage crumbles
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 2 tbsp unsalted butter

  • Mixing bowl
  • Whisk
  • Non-stick skillet or griddle
  • Spatula
  • Knife and cutting board

Method
 

  1. Prepare the eggs
  2. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  3. Cook the eggs
  4. Heat 1 tablespoon of butter in a skillet over medium heat. Pour in the egg mixture and gently scramble until just set. Remove from heat and set aside.
  5. Assemble the quesadillas
  6. Lay a tortilla flat on a clean surface. Sprinkle half of the cheese on one side of the tortilla, followed by scrambled eggs, bacon or sausage, bell peppers, and green onions. Add the remaining cheese on top and fold the tortilla in half.
  7. Cook the quesadillas
  8. Heat the remaining butter in a skillet over medium heat. Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining tortillas.
  9. Slice and serve
  10. Remove the quesadillas from the skillet and let cool slightly. Cut into wedges and serve warm.
