  • 1 whole ripe pineapple Choose a ripe pineapple for the best flavor.
  • ½ cup brown sugar
  • 1 teaspoon cinnamon Optional for added flavor.

Method
 

Preparation
  1. Start by cutting off the top and bottom of the pineapple. Stand it upright and slice the skin off, removing all the eyes. Cut the pineapple into ½-inch thick rings or wedges.
Coating
  1. In a shallow dish, combine brown sugar and cinnamon (if using). Dredge the pineapple slices in the brown sugar mixture, ensuring all sides are coated evenly.
Grilling
  1. Preheat your grill to medium-high. If using a grill pan, lightly grease it with cooking spray or oil to prevent sticking.
  2. Place the coated pineapple slices on the grill. Grill each side for about 3-4 minutes, or until you see beautiful grill marks and the sugar begins to caramelize.
Serving
  1. Remove the grilled pineapple from the grill and serve warm. It’s fantastic on its own or with a dollop of whipped cream or a sprinkle of nuts for added crunch.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat gently on a skillet or in the microwave. Grilled pineapple also makes a great addition to smoothies or fruit salads.
