Preparation
- Start by cutting off the top and bottom of the pineapple. Stand it upright and slice the skin off, removing all the eyes. Cut the pineapple into ½-inch thick rings or wedges.
Coating
- In a shallow dish, combine brown sugar and cinnamon (if using). Dredge the pineapple slices in the brown sugar mixture, ensuring all sides are coated evenly.
Grilling
- Preheat your grill to medium-high. If using a grill pan, lightly grease it with cooking spray or oil to prevent sticking.
- Place the coated pineapple slices on the grill. Grill each side for about 3-4 minutes, or until you see beautiful grill marks and the sugar begins to caramelize.
Serving
- Remove the grilled pineapple from the grill and serve warm. It’s fantastic on its own or with a dollop of whipped cream or a sprinkle of nuts for added crunch.
Notes
Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat gently on a skillet or in the microwave. Grilled pineapple also makes a great addition to smoothies or fruit salads.
