  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg Room temperature is best.
  • 2 ripe bananas, mashed The riper, the better!
  • 1 tablespoon melted butter Plus more for cooking.

Preparation
  1. In a large bowl, combine the flour, brown sugar, baking powder, baking soda, and salt. Whisk until well mixed.
  2. In another bowl, mix the buttermilk, egg, mashed bananas, and melted butter. Whisk until smooth.
  3. Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Don’t over mix—it’s okay if there are a few lumps!
Cooking
  1. Heat a non-stick skillet or griddle over medium heat. Brush with butter to prevent sticking.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes or until golden brown.
Serving
  1. Serve warm with your favorite toppings like maple syrup, fresh fruit, or whipped cream.

Notes

Use overripe bananas for added sweetness and don’t over mix the batter to ensure fluffy pancakes. Adjust the sweetness according to your taste by reducing the brown sugar.
