  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice Cook it only halfway before adding to the casserole.
  • 3 cups broccoli florets
  • 2 cups shredded cheese (cheddar or your favorite blend) Reserve some for topping.
  • 1 can cream of chicken soup 10.5 oz can.
  • 1 cup chicken broth Make sure to use enough liquid.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1/2 cup breadcrumbs (optional, for topping) For a crunchy topping.

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
  2. In a large bowl, combine the shredded chicken, uncooked rice, broccoli florets, cream of chicken soup, chicken broth, garlic powder, and half of the shredded cheese. Season with salt and pepper to taste.
  3. Pour the mixture into your prepared casserole dish and spread it out evenly.
  4. Top with the remaining cheese and sprinkle breadcrumbs if desired.
  5. Cover the dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes or until the casserole is bubbly and golden.
  7. Let the casserole rest for a few minutes before serving. Enjoy!

Notes

For a well-rounded meal, serve with a garden salad and crusty bread. Customizations include adding cream cheese or other vegetables like carrots or peas.
