  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh broccoli, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the chopped broccoli, cheddar cheese, cream cheese, minced garlic, salt, pepper, and paprika. Stir until nicely combined.
  3. Pat the chicken breasts dry and slice a pocket into each one, being careful not to cut all the way through.
  4. Take a generous amount of the broccoli mixture and stuff it into each chicken breast pocket, securing the opening with toothpicks if necessary.
Cooking
  1. In an oven-safe skillet, heat olive oil over medium heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side, until golden brown.
  2. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  3. Remove from the oven, let it rest for a few minutes, then slice and enjoy your delicious Broccoli Cheddar Stuffed Chicken!

Notes
