Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the chopped broccoli, cheddar cheese, cream cheese, minced garlic, salt, pepper, and paprika. Stir until nicely combined.
- Pat the chicken breasts dry and slice a pocket into each one, being careful not to cut all the way through.
- Take a generous amount of the broccoli mixture and stuff it into each chicken breast pocket, securing the opening with toothpicks if necessary.
Cooking
- In an oven-safe skillet, heat olive oil over medium heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let it rest for a few minutes, then slice and enjoy your delicious Broccoli Cheddar Stuffed Chicken!
Notes
For sides, consider pairing with steamed asparagus, roasted sweet potatoes, or a fresh garden salad. A light citrus vinaigrette goes perfectly with the flavors of the chicken. If you have leftovers, store them in an airtight container for up to 3 days or freeze for up to 3 months.
